WHere is a home-style version of a drink featured on the seasonal menu. This is a batch pre-mixed that's bursting with tastes of a holiday season, which makes it perfect for hosting a festive gathering. Reserve the remaining cordial to use in morning drinks, sweets, or to make more rounds of bikinis.
Bikini
Serves 10 people
For the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Drink (produces 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Instructions
For the Syrup: Put every components into a saucepan, heat until it reaches a gentle boil, agitating until the sugar dissolves. Next, remove from the stove and let it to cool fully. Pour into an sterilised bottle, close it and store chilled, where it will keep for around four weeks.
For the Batch Mix: Mix every liquids in a big jug, leave to sit for an hour, then filter it best through a fine cloth, to ensure it's perfectly clear.
When ready to serve: Pour 85ml from the cocktail base to a cocktail shaker filled with ice, and stir carefully for one minute to cool it down. Strain into a chilled martini glass or equivalent, top with a few cranberries adding the final touch with a quick spritz with the mandarin essence over the drink.
